This is the next iteration of the bun recipe. 200g self-raising white flour 100g butter 1/2 tsp salt 2 heaped tsp mixed sweet spices (cinnamon, clove, coriander, that kind of stuff)
Mix the salt and the spices with the flour. Rub in the butter.
100g mixed raisins 30g crystallised ginger, chopped fine 100g mixed nuts, chopped coarse (I used pecans, almonds, peanuts, pine nuts and walnuts) 50g sugar zest of half a lemon [You could probably add a decent quantity of hashish softened with butter here, too, if you were feeling Toklashish]
Add to the flour and fat, and mix well.
1 medium egg 100ml or so milk A good splash of brandy
Beat together egg and brandy.
Pour into mixing bowl and stir thoroughly, adding milk to make a thick mixture.
Preheat oven to Gas 6, 200C, 400F. Grease muffin/bun tray. Spoon mixture into tray to give ten buns. Bake for 30 minutes or so until done. Still not quite right yet, but pretty close. Maybe a little more sugar next time. Perhaps a bit more spice. We'll see.
