Hot stuff

It's about that time of year when I look at the chili plants and think "Now what am I going to do with these?"

So far I've dried them, made hot sauce and chili vodka, and sweet pickled them. This year I'm inclined to do something different with them: namely, candy them.

Candied chilies? Why not? They're fruit, and you can candy fruits generally. The only factor that should make any technical difference is that they have shiny coats which I suspect will not let the syrup through. So what I'm planning on doing is splitting them lengthways and scooping out the seeds before putting them in the candying syrup. That way it should find its way inside. It'll also have the effect of reducing the fire somewhat, but the ones I grow have plenty of that, so it shouldn't lose too much.

Anyone here ever candied chilies before?

Maybe I'll get some confectioner's chocolate and chocolate coat some of them as well. Does that sound like a good idea?
