Nearest book? If I were to do this accurately, I'd need surveying tools. So what I'm going to do is to pick the book that I can see right now that's nearest to me; in other words, the one that happens to be perched atop my monitor.
Here goes:
As in the case of desiccation at higher temperatures, the moment of injury can be during dehydration (freezing) or rehydration (thawing), or develop gradually in the dehydrated (frozen) state, depending on the time course followed. If then frost damage is primarily due to dehydration it can be postulated that the injury is due to the development of mechanical stresses and the denaturation of macromolecules.
Freezing has been shown to impair the activities of some enzymes, but many enzymes can withstand freezing and the most important effect is again thought to be damage to cellular membranes though denaturation and aggregation of membrane proteins.
